INGREDIENTS

  • 1/4 ripe persimmon

  • 1/4 oz fresh lemon

  • 1/4 oz maple syrup

  • 3-4 thyme sprigs

  • 2 oz Switchgrass Rye

  • 2 dashes orange bitters

DIRECTIONS

  1. Prepare the persimmon by trimming off the ends, scooping out the center, and cutting it into quarters.

  2. In a cocktail shaker, gently muddle all ingredients until the persimmon pulp has separated from its skin.

  3. Shake with ice for about 20 seconds and strain into a rocks glass over fresh ice.

  4. Garnish with a sprig of thyme.
