Persimmon Smash
PERSIMMON SMASH
INGREDIENTS
1/4 ripe persimmon
1/4 oz fresh lemon
1/4 oz maple syrup
3-4 thyme sprigs
2 oz Switchgrass Rye
2 dashes orange bitters
DIRECTIONS
Prepare the persimmon by trimming off the ends, scooping out the center, and cutting it into quarters.
In a cocktail shaker, gently muddle all ingredients until the persimmon pulp has separated from its skin.
Shake with ice for about 20 seconds and strain into a rocks glass over fresh ice.
Garnish with a sprig of thyme.
